Crustless Quiche
I like to surf the internet for recipes with ingredients I normally buy since you can save a lot of money this way. So one day I came across a recipe called potato pie. I do not know who made it originally so I can’t give anybody credit for it. I have made some changes, as usual, like using chicken hotdogs instead of bacon (bleh) and by adding milk, garlic and black pepper.
The recipe is really simple to make and you can use it for dinner or… breakfast burrito’s! ![]()
It tastes great with salsa and a nice salad.
Ingredients
- 12 eggs
- 2.5 cups of grated cheese
- 4 hotdogs
- 1 cup of (lowfat) milk
- 4 medium potatoes
- 2 large onions
- 1/2 tsp of pepper
- 2 minced cloves of garlic
Equipment
- a 9×13 glass oven dish
- a knife
- a cutting board
- a large spoon
- a food processor (optional)
- oven mittens
Total preparation time : 1.5 hours
1.) Preheat the oven to 350F
2.) Put the eggs, cheese, garlic, minced garlic and milk into the oven dish and mix well.
3.) Peel and cut the onions and put them in the food processor to slice them up as small as possible, add them to the oven dish and mix well.
4.) Cut the hotdogs into small pieces and mix them in with the other ingredients in the oven dish.
5.) Peel, wash and cut the potatoes and put them in the food processor to slice them up as small as possible and add them to the oven dish.
6.) Mix everything really well.

7.) Put it in the oven for about 1 hour. Make sure to check it in the last 10 minutes since every oven is different.
8.) Take it out of the oven once the entire top is nicely browned.

9.) Let it cool down for about 10 minutes.
And enjoy you crustless quiche!

This way it makes a great dinner

But this way it can also make a great breakfast, just roll it up for a breakfast burrito.
