Nut and Raisin Cookies.
I have a sweet tooth but am also a health freak on a low budget so about 2 years ago I started surfing around the internet to look for for a nice and healthy recipe.
On 1 website (I can’t remember which one) I came across the recipe that I will show you here, with a few modifications of my own of course. ![]()
I use 3/4 cup of sugar instead of 1 3/4 and whole wheat flour instead of all-purpose. I rarely have chopped nuts or molasses so I often use Nature Valley honey and nut bars and lite syrup instead. They taste great both ways anyway.
Ingredients
- 2 1/4 cup of whole wheat flour
- 1 1/4 cup of raisins
- 3/4 cup of sugar
- 3/4 cup of nuts OR 2 hard nut and honey granola bars ground into small pieces
- 1/5 tsp of cinnamon
- 1/2 tsp of baking powder
- 1/4 cup of vegetable oil
- 1.5 tsp of vanilla
- 2 tsp of syrup OR molasses
- 2 tbsp of water
- 3 eggs
Equipment
- a large mixing bowl
- measurement cups and spoons
- a ice-cream scoop or spoon
- a fork
- a cookie sheet
- oven mittens
- a spatula
Preparation
Total preparation time : 1 hour
1) Preheat the oven to 350F
2) Put the flour, raisins, sugar, baking powder, nuts and cinnamon into the bowl and mix them well.
3) Put the oil, vanilla, molasses or syrup, eggs and water into a separate bowl and mix them well.
4) Combine all the ingredients and mix them well.
5) Put the cookie dough on a cookie sheet using the spoon or ice-cream scoop.

6) Put the cookies into the oven for 10-15 minutes.
7) Take the cookies out of the oven once the bottom is nicely browned.
8.) Take the cookies of the cookie sheet and let them cool down for a few minutes.
