Pizza

The first time I had pizza was when I was in Italy with my family and I think that I was 11 at that time. I loved it since the first bite and still do. ;-)
From then on we ate it monthly but always the standard freezer ones. I didn’t start making my own pizza until 2006 when I was living together with my fiance, now my husband.
Our freezer was really small so we couldn’t store any and one day I was like : “why can’t I just make it myself?”

My sister had been making homemade pizza for years because she’s allergic to cheese so I talked about it with her and she gave me her recipe and some tips on how to make it.
I’m currently using a bread machine for the dough so I’ll give both dough recipes.

Ingredients dough by hand

  • 1 cup of warm tap water
  • 1 tsp of bread yeast
  • 3 – 3.5 cup of flour (I use 1/3th all purpose and 2/3th whole wheat)
  • 1/2 tsp salt
  • 1 tbsp of oil

Ingredients breadmachine dough

  • 1 teaspoon white sugar
  • 1 1/2 cups warm water (110 degrees F/45 degrees C)
  • 1 tablespoon active dry yeast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups whole wheat flour
  • 1 1/2 cups all-purpose flour

Ingredients Toppings

There is no real standard for the toppings so I’ll just give you a list of what my husband and I like to add to our pizza’s.
I skip the salami and olives by the way. ;-)

  • a can of tomato sauce
  • 1/2 cup of salsa
  • grated cheese
  • 1 sliced up onion
  • shredded pineapple
  • garlic powder
  • pepper
  • salami
  • olives

Equipment

  • measuring cup and spoons
  • a large bowl or a breadmachine
  • cookie or pizza sheet
  • oven mittens
  • a knife
  • a cutting board

Preparation

Total preparation : 2 hours

Dough by hand.

1) Pour the water into the bowl and sprinkle in the yeast.
2) Mix it well with a fork until all the yeast has dissolved and the mixture turns light beige in color.
3) Add 1 cup of the flour and all of the salt.
4) Mix well with a fork.
5) Add a second cup of flour to the bowl and mix well.
The dough should now begin to form a soft and really sticky mass.

6) Now put some flour on the work surface (a kitchen counter works great) and your hands.
7) Put the dough on your work surface and knead it really well, adding a little flour at a time until the dough feels dry.
8.) You can test whether the dough is good by pushing the heel of your hand down into it and holding it there for 10 seconds. If your hand is clean when you take it, the dough will be done. If it’s still sticky then you need to add some more flour.
9) Once the dough is done, make into a ball and coat it with the oil.
10) Seal it with a plastic wrap and let it rise in a warm and draft-free place for about 45 minutes.

After 45 minutes the dough should have doubled in size.
11) Knead it until all the buildup gas is out of it.
12) Optional : let it rise for another 45 minutes and knead it well again.
13) Preheat the oven on 350F
14) Spread the dough out on the cookie or pizza sheet(s) and put in in the oven for 10 minutes on 350F.

Dough in the breadmachine.

1) Put all the ingredients in the breadmachine in the order given.
2) Put the breadmachine on dough and turn it on.

After 1.5 hours it should be done.
4) Preheat the oven on 350F
5) Spread the dough out on the cookie or pizza sheet(s) and put in in the oven for 10 minutes on 350F.

The finishing touches

Total time : ~45 minutes

After 10 minutes the dough should have baked into a nice crust.

1) Add the tomato sauce and salsa and spread it out on the crust.
2) Add the other ingredients.
3) Put it in the oven for 25-30 minutes.
And enjoy your pizza(s)!

Both dough recipes give me enough dough to make 2 medium to large pizza’s.
