Oatmeal and Raisin Muffins
Since I got tired of eating oatmeal for breakfast, especially since it was getting warmer due to Summer, I decided to use the leftover oatmeal for something else.
On the side of the package was a nice muffin recipe which I, of course, slightly adjusted to make it healthier while still keeping a tasty.
The muffins turned out great so I am now sharing my recipe and hope that you will enjoy the muffins as much as we do.
Ingredients
- 1 cup of old-fashioned oats
- 1 cup of whole wheat flour
- 1/2 a cup of brown sugar
- 1/2 a cup of raisins
- 2 tsp of baking powder
- 1/2 tsp of ground cinnamon
- 1/4 tsp of baking soda
- 1/4 tsp of salt
- 1 cup of applesauce
- 1/3 cup of canola oil
- 1 egg
- 1.5 tsp of vanilla extract
- cooking spray
Equipment
- 2 mixing bowls
- a fork
- a ice cream scoop or spoon
- a muffin pan
- oven mittens
- a large spoon
How to make the muffins.
Total preparation time : ~30 minutes
1) Preheat the oven to 400F.
2) Mix together the oats, flour, brown sugar, raisins, baking powder, cinnamon, baking soda and salt with the fork in 1 bowl.
3) And mix together the applesauce, oil, egg and vanilla extract in the other.

4) Add the 2 mixtures together and carefully mix them enough to make sure that it’s evenly mixed up. Do not overmix it or your muffins will look like coneheads.
5) Now evenly divide your mixture into the muffin pan.

6) Put it in the oven for 20-25 minutes or until the top is nicely browned.

7) Take the muffins directly out of the muffin pan with the spoon and let them cool down.
