Lasagna : Mexican Style
I came up with this recipe because I couldn’t decide on what I wanted to eat that evening, lasagna or enchiladas. So I decided to combine both recipes and see how it turns out.
Ingredients.
- 1 pound of meat (I prefer ground beef)
- 1 large onion
- 40 oz of tomato sauce.
- 0.5 tbsp of minced garlic
- 7 chili peppers
- 1/2 cup of salsa
- 2 cups of shredded cheese
- 6 large flour tortilla’s
- 1.5 cup oz of Pinto beans
- 1/2 cup of (low-fat) milk
- cooking spray
Equipment.
- a large frying pan
- a sauce pan
- a blender
- a large spoon
- a knife
- a cutting board
- measuring tools
- oven mittens
- a 9×13 oven dish
Making the refried beans.
Total preparation time : ~3.5 hours.
1) Boil the beans in the frying pan for about 5 minutes.
2) Take it off the heat, cover it and let it stand for 1 hour.
3) Rinse off the beans, refill the pan with water and bowl it for 2 hours.
4) Drain the water, put the beans in the mixing bowl and mash them with the potato masher.
5) Add the milk to it and mix well.

Preparing the meat.
Total preparation time : ~15 minutes
1) If needed : cut up the meat into small pieces
2) Cook the meat together with the chopped up onion in the frying pan until it’s fully cooked and drain most of the fat.
3) Add the refried beans to the meat mixture and stir well.
Making the sauce.
Total preparation time : ~5 minutes.
1) Take the tops of the chili peppers and throw them in the blender. If you leave the seeds in, the sauce will be spicier.
2) Add the salsa, tomato sauce and garlic to the blender and mix well.

3) Heat up the sauce in the saucepan.

Making the Lasagna.
Total preparation time : ~1 hour.
1) Preheat the oven to 350F.
2) Spray the oven dish with the cooking spray.
3) Lay 2 of the tortilla’s on the bottom and cut of the edges so it fits well.

4) Cover it with half of the meat/bean mixture, some sauce and some cheese.

5) Lay 2 of the tortilla’s it and cut of the edges so it fits well and repeat step 4.
6) Cover it with the last 2 tortilla’s and add the remaining sauce to it.

7) Cover it with foil and put it in the oven for 30 minutes.
8.) Take off the foil, add a layer of cheese and put it in the oven for additional 10 minutes.
And enjoy your Lasagna!

Note : I prefer to make it in the morning so the flavor soaks in better. To reheat it you can put it in the oven for 30 minutes on 350F or put it in the microwave for a few minutes.
A sour cream topping goes great with it.
