Ingredients
- 4 large potatoes
- 1/2 cup of sour cream
- 1/2 cup of shredded cheese
- 1/2 cup of chives
- (olive) oil
Equipment

- a hand mixer or a potato masher
- a vegetable brush
Once baked potatoes
Total preparation time : 1.5 hours
1) Preheat the oven to 400F.
2) Clean the potatoes. I always use a vegetable brush while rinsing it simultaneously under running water.
3) Rub the oil on the potatoes.
4) Poke holes in the potatoes with the fork on both sides so the potatoes dont explode when you bake them. I normally poke them 4 times on each side.

5) Put the potatoes on the cookie sheet and bake them for about 1 hour and 15 minutes. The potatoes should give a little when you press on them after this time.
Twice baked potatoes
Total preparation time : ~45 minutes
1) Take the potatoes out of the oven and let them cool down for about 10 minutes.
2) Put the oven on 350F.
3) Cut the potatoes in half lengthwise.
4) Spoon out the insides of the potato halves.

5) Mash it and mix it with the sour cream, chives and cheese. I normally just use a hand mixer and skip the mashing since I’ve noticed that it becomes a lot creamier this way.

6) Put the filling into the potato halves and top it with some extra cheese.

7) Put it in the oven for 15-20 minutes until they’re totally heated.
8.) Let it cool down for a few minutes and enjoy your twice baked potatoes!

Tip : sprinkle some bacon bits on them.
